D\u00e8s le XVIIIe si\u00e8cle, des textes mentionnent d\u00e9j\u00e0 des recettes de fromage fondu m\u00e9lang\u00e9 \u00e0 du vin.<\/p>\n<p>La version actuelle dite \u00ab\u00a0fondue savoyarde\u00a0\u00bb est n\u00e9e dans les Alpes fran\u00e7aises, dans les vall\u00e9es de Haute-Savoie et de Savoie, o\u00f9 les paysans utilisaient les restes de fromage et de pain dur pour composer un plat nourrissant et r\u00e9confortant, parfait apr\u00e8s une journ\u00e9e dans le froid.<\/p>\n<h2>Les fromages stars de la fondue savoyarde<\/h2>\n<p>La recette traditionnelle m\u00e9lange trois fromages locaux, r\u00e2p\u00e9s ou coup\u00e9s en petits morceaux :<\/p>\n<ul>\n<li>Comt\u00e9 (fruit\u00e9, doux)<\/li>\n<li>Beaufort (plus cors\u00e9, typique de Savoie)<\/li>\n<li>Emmental de Savoie (fonte l\u00e9g\u00e8re et onctuosit\u00e9)<\/li>\n<li>Parfois, on y ajoute un peu de Tomme de Savoie ou de Reblochon selon les go\u00fbts ou les traditions familiales.<\/li>\n<\/ul>\n<h2>Les ingr\u00e9dients essentiels<\/h2>\n<p>Pour une fondue savoyarde r\u00e9ussie, il vous faut :<\/p>\n<ul>\n<li>200 g de fromage par personne (environ \u2153 de chaque type)<\/li>\n<li>1 gousse d\u2019ail<\/li>\n<li>1 verre de vin blanc de Savoie sec (Apremont ou Roussette)<\/li>\n<li>1 c. \u00e0 caf\u00e9 de ma\u00efzena ou farine<\/li>\n<li>Poivre et muscade<\/li>\n<li>Pain rassis ou pain de campagne en cubes (pas trop frais, pour qu\u2019il ne se casse pas dans le fromage !)<\/li>\n<\/ul>\n<h2>La pr\u00e9paration traditionnelle<\/h2>\n<ol>\n<li>Frotter l\u2019int\u00e9rieur du caquelon avec une gousse d\u2019ail.<\/li>\n<li>Faire chauffer le vin blanc \u00e0 feu doux.<\/li>\n<li>Ajouter progressivement les fromages, en remuant en forme de 8.<\/li>\n<li>Ajouter la ma\u00efzena d\u00e9lay\u00e9e dans un peu de vin si la texture est trop liquide.<\/li>\n<li>Poivrer, ajouter une pinc\u00e9e de muscade.<\/li>\n<li>Servir imm\u00e9diatement sur un r\u00e9chaud \u00e0 fondue, en gardant la pr\u00e9paration bien chaude.<\/li>\n<li>Chacun plonge ses morceaux de pain \u00e0 l\u2019aide d\u2019une longue fourchette&#8230; et gare \u00e0 celui qui les perd dans le fromage ! (La tradition veut qu\u2019il offre une tourn\u00e9e ou un gage \ud83d\ude09).<\/li>\n<\/ol>\n<h2>Variantes &amp; astuces<\/h2>\n<p>Fondue au reblochon : plus onctueuse et puissante en go\u00fbt<br \/>\nFondue moiti\u00e9-moiti\u00e9 (Savoie\/Suisse) : m\u00e9lange de gruy\u00e8re suisse et de vacherin.<br \/>\nOn peut aussi remplacer le vin par du bouillon ou ajouter un trait de kirsch pour parfumer.<\/p>\n<h2>Un plat d\u2019hiver devenu embl\u00e8me touristique<\/h2>\n<p>La fondue savoyarde est devenue un classique des stations de ski, des chalets de montagne, mais aussi des repas de f\u00eate en famille.
